Neeraj Kumar, a famous farmer from Siddharthnagar district in Uttar Pradesh, has gained attention once again for his production of black salt rice, a specialty rice that is now being cultivated in Bihar as well. Over 50 farmers in Begusarai district have joined Kumar in producing black salt rice and creating rice from it, thanks to the efforts of the Department of Agriculture. This rice is known for its unique fragrance and medicinal properties, and according to historical accounts, it is believed to have received the blessings of Lord Buddha himself.
Black salt rice has a history dating back to 600 BCE or the time of Buddha. In ancient times, this rice was grown primarily in the Terai regions of Uttar Pradesh and Nepal and used to make rice. However, this time, farmers in Begusarai have successfully cultivated it as well. Dr. Krishna Kumar, a medical officer at Begusarai Sadar Hospital, explained that black rice contains high levels of antioxidants, which help protect against stress.
In addition to its antioxidant properties, black rice is also rich in lutein and zeaxanthin, which are beneficial for eye health. These compounds protect the eyesight and prevent diseases. Furthermore, black rice, which is high in fiber, helps reduce the risks of obesity, type 2 diabetes, and certain gastrointestinal disorders.
