The dahi (yogurt) from the shop of Gopal Mithan Bhandar located at Shaheed Chowk in Katihar, Bihar, is exceptionally delicious. The shop, which has been around for 25 years, sells over 5 quintals of dahi only on Makar Sankranti (a festival). People even make advance bookings for the dahi. The shop offers both white and sweet dahi, which is prepared by the Bengali employees, who make it along with the white dahi. Arun Verma, an employee at Gopal Mithan Bhandar, says that they sell more than 5 quintals of dahi on Makar Sankranti. People love both the white and sweet dahi. In terms of price, the sweet dahi costs Rs. 200 per kilogram, while the white dahi is sold at Rs. 140 per kilogram.
The Process of Making the Dahi
The process of making the dahi involves heating the milk in a kadhai (wok) and then letting it cool down slightly. After that, the milk is transferred to earthen pots, in which the dahi is set. The pots are covered with a tray and a blanket, and the dahi is ready in 4 to 5 hours. The dahi is made with special cleanliness measures during Makar Sankranti.
